Pasteurization, applied to various foods such as milk, ice cream, beer, sausages, and canned liquids, is fundamental for consumer safety, since its objective is to destroy pathogenic microorganisms that cause disease. In Brazil, there are about 35 thousand companies operating in the food and beverage sector, accounting for the generation of approximately 7.6 million direct and indirect jobs, according to data from ABIA, moving more than 750 billion reais annually, and worldwide it employs more than 1 billion people in the entire production chain, from agriculture to trade.
